Shirley'S Rice Pudding

Ingredients
- 2 c. cooked rice
- 1/4 c. sugar or substitute
- 2 eggs or egg substitute
- 1/2 c. milk (skim)
- 1 tsp. vanilla
- 1 small pkg. sugar-free jello vanilla pudding
- 2 egg whites or topping
Directions

1Preheat oven to 375°.

2Mix rice, sugar, egg, milk and vanilla. Bake until thick; remove.

3Prepare pudding and cook until slightly thick.

4Pour over rice mixture.

5Place in oven for more cooking.

6Remove when starting to brown.

7Beat egg whites; prepare for pie topping.

8Add to rice pudding and brown or use whipped topping (either is wonderful).

9Serve warm or cold.

10This makes a wonderful dish for someone who can't eat sugar.
