Shoe Peg Corn Casserole

  • 1/2 c. onion, chopped
  • 1/4 c. green pepper, chopped
  • 16 oz. can Shoe Peg corn, drained
  • 1 can cream of celery soup
  • 8 oz. sour cream
  • 1 stack Ritz crackers, crushed
  • 1/2 c. celery, chopped
  • 1/2 c. sharp Cheddar cheese
  • 16 oz. French-style beans, drained
  • 1/2 c. margarine, melted

Directions

    Combine onion, celery, green pepper, cheese, corn and green beans in a large bowl.

    Add soup and sour cream.

    Salt and pepper to taste.

    Spoon into 9 x 13-inch baking dish.

    Top with mixture of margarine and cracker crumbs.

    Bake at 350° for about 45 minutes.
