- two boneless shortribs
- one beef shank
- 3 T. canola oil
- salt & pepper
- 2 - 3 T. horseradish
- 3 - 4 T. flour
- 1/2 cup red wine or white wine
- large shallot, roughly chopped
- 2 - 3 cloves garlic, crushed
- beef or chicken broth
- 1 1/2 - 2 T. tomato paste
- 1/8 - 1/4 t. cayenne pepper
- 1/2 t. cumin
- mushroom,roughly chopped
- baby carrots, julienned
- celery, roughly chopped
- 1 - 2 t. fresh thyme
- Polenta
- 3 - 4 T. Olive oil
- 3 cloves fresh garlic, finely minced/crushed
- 1 1/2 cups polenta
- ~1 quart chicken stock
- 1 cup finely grated parmesan
- 1/4 cup 1/2 & 1/2
