Shortbread Cookies

  • 1 c. soft butter or margarine
  • 5/8 c. sugar (1/2 c. plus 2 Tbsp.)
  • 2 1/2 c. sifted all-purpose flour
  • 2 Tbsp. cornstarch

Directions

    Cream butter until consistency of mayonnaise.

    Add sugar gradually; cream until light and fluffy.

    Combine flour and cornstarch; beat in slowly.

    When all is added, mix thoroughly with hands.

    Chill.

    Roll out on lightly floured surface to about 1/4-inch thickness.

    Cut with cookie cutter (about 2 1/2 inches). Bake on ungreased cookie sheets at 300° for 20 to 25 minutes. (Should be just barely browned.)
