  • 3-4 lb chuck roast
  • 8 cloves garlic
  • 1 med onion, chopped
  • 2 tsp oregano
  • 1 tsp cumin
  • 1/4 cup beef stock
  • Salt & pepper to taste
  • 4 Tbl seasoning (taco, enchilada)

    1. With a sharp knife slit roast and insert whole garlic cloves

    2. Add all ingredients to a crock pot or slow cooker
  3. 3
    3. Cook on low for 8 hours

    4. Remove & cool,gather all onions & garlic
  5. 5
    5. Using 2 forks, shred beef into small pieces
  6. 6
    6. Use knife if necessary to keep beef small
  7. 7
    7. Combine with onion, garlic and chill
