Shrimp-Avocado Salad

  • 1 (3 oz.) pkg. lime Jell-O
  • 1 c. hot water
  • 1/2 c. cold water
  • 1 1/2 Tbsp. vinegar
  • 1/2 c. mayonnaise
  • 1/8 tsp. pepper
  • 3/4 c. diced shrimp (7 oz. can)
  • 1/3 c. celery
  • 1 tsp. chopped onion
  • 1 c. diced avocado

Directions

    Dissolve gelatin in hot water.

    Add cold water, vinegar, mayonnaise, salt and pepper.

    Blend with rotary beater.

    Pour into refrigerator tray.

    Quick chill in freezing unit until firm, about 1-inch from edge, but soft in the center, about 15 to 20 minutes.
