Shrimp Bisque

Ingredients

  • 1 lb. shrimp
  • 1/2 c. chopped celery
  • 1/4 c. chopped onion
  • 2 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 2 c. half and half
  • 2 Tbsp. dry sherry

    Wash shrimp and place in 1-quart boiling water.

    Bring water back to boiling.

    Cover and remove from heat.

    Let stand for 5 minutes.

    Remove shrimp and add next 5 ingredients to cooking water.

    Simmer 30 minutes.

    Peel, devein and chop shrimp.

    When stock is finished simmering, blend in blender with 1/2 the shrimp until smooth.
