Ingredients
- 1 1/2 lb. shrimp, peeled and deveined
- 2 Tbsp. oil
- 1 c. sliced onion
- 1 pkg. frozen snow peas
- 1 (16 oz.) can fancy mixed Chinese vegetables
- 1/4 tsp. pepper
- 1/4 c. soy sauce
- 1 1/4 c. chicken broth
- 2 Tbsp. cornstarch
Directions

1Saute shrimp in oil for 1 minute or until shrimp turn pink, using a large skillet.

2Add onion and snow peas; cook, stirring 2 minutes.

3Add Chinese vegetables which have been rinsed and drained.

4Cover and cook 1 minute.

5Blend pepper, soy sauce, chicken broth and cornstarch.

6Stir into shrimp/vegetable mixture. Cook, stirring until sauce is clear and thickened.
