Shrimp Casserole

Ingredients

  • 1 c. frozen shrimp soup
  • 1 (6 oz.) can evaporated milk
  • 4 oz. shredded sharp cheese
  • 1/2 c. mayonnaise
  • 1/4 tsp. salt
  • 2 c. green onions, chopped
  • 1 (4 oz.) can mushrooms, drained
  • 4 oz. medium noodles
  • 1/2 lb. cooked shrimp
  • 1/4 c. dry sherry

Directions

    In a pan combine soup and milk.

    Bring to a boil, stirring often.

    Remove from heat and add cheese, mayonnaise and salt. Stir until cheese melts.

    Blend in sherry.

    Add shrimp, noodles, onions and mushrooms.

    Mix well and turn into casserole dish. Bake, covered, 25 minutes at 350°.

    Uncover and add a bit of shredded cheese on top.

    Bake 10 minutes more.
