Shrimp Casserole

Ingredients

  • 1 c. chopped onions
  • 1 c. chopped celery
  • 1 c. chopped bell pepper
  • 4 minced garlic cloves
  • 1/2 c. chopped onion tops
  • 1 Tbsp. parsley flakes
  • 3 c. shrimp, peeled and deveined
  • 3 c. cooked rice
  • 1 can cream of mushroom soup
  • 3 slices white bread, soaked in milk
  • 1 stick oleo or butter
  • 1/2 c. hot water
  • bread crumbs

Directions

    Saute onions, celery, bell pepper and garlic in 1 stick butter or oleo.

    Add parsley flakes, onion tops, soup, shrimp, rice, bread and hot water.

    Season to taste.

    Cook 8 to 10 minutes.

    Pour into 2 quart casserole.

    Top with bread crumbs and pats of butter. Bake at 350° for 30 to 35 minutes.
