  • 1 pound Shrimp [peeled, deveined]
  • 3 Limes [juice of]
  • 1 Orange [juice of]
  • 1 Red Onion [diced]
  • 2 Jalapenos [minced]
  • 1 cup Cucumber [peeled, sedded, diced]
  • 1 cup Cherry Tomatoes [chopped]
  • 3 tablespoons Cilantro [chopped]
  • 1/4 cup Mayonnaise
  • 2 tablespoons Hot Sauce
  • 8 Tostadas [toasted tortillas]
  • 1 Avacado [sliced]

    1. Bring a large pot of well-salted water to a boil. Turn off heat, add shrimp, and poach until shrimp are pink and cooked through, about 3 minutes.

    2. Drain, let cool, then chop shrimp into bite-size pieces. In a large bowl, combine shrimp with lime juice, orange juice, onion, and jalapenos. Season with salt, then let marinate in the refrigerator, 1 hour.
