- 3 medium onions, peeled and diced
- 1/4 lb. butter
- 4 large potatoes, peeled and diced
- 2 c. boiling water
- salt and pepper
- 1 lb. Velveeta cheese
- 1 1/2 pt. milk
- 1 1/2 lb. shrimp, cooked
- fresh parsley
Directions

1Lightly cook onions in butter.

2Add potatoes and boiling water.

3Simmer until potatoes are tender and season to taste. Melt cheese in milk and add to potatoes and onions.

4Add shrimp and simmer gently for 20 minutes or more.

5Do not boil!

6Top with fresh snipped parsley.
