- 1/2 c. chopped onion
- 2 Tbsp. butter
- 1 1/2 c. water
- 1 lb. medium shrimp, thawed
- 3 c. frozen hash browns
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 c. milk
- 1/2 c. half and half
- 4 oz. shredded Cheddar
- 1/4 c. chopped parsley
Directions

1Cook butter and onion in large saucepan for 5 to 7 minutes over medium heat.

2Add water; bring to a boil.

3Add shrimp; cook 3 to 5 minutes.

4Remove shrimp to bowl.

5Add potatoes, salt and pepper; simmer 4 to 6 minutes.

6Add milk and half and half.

7Bring to a boil, stirring.

8Remove from heat.

9Stir in cheese and parsley.

10Let stand until cheese melts.

11Stir in shrimp and serve.
