Shrimp Chowder

Ingredients

  • 3 c. small shrimp (can use salad size), cooked and chopped
  • 2 Tbsp. oil
  • 1 c. thinly sliced onion
  • 1 Tbsp. flour
  • 2 c. potatoes, cubed
  • 1 c. boiling water
  • 1 tsp. chicken base or 2 bouillon cubes
  • 2 c. half and half
  • 1/2 tsp. salt
  • white and red pepper
  • parsley

Directions

    Heat oil and saute onion until well cooked, but not browned. Add flour and mix well.

    Add potatoes and water with chicken base. Cover tightly and boil until potatoes are tender, but not broken. Add shrimp, cream, salt and peppers.

    Heat until warm (don't boil)!

    Sprinkle with parsley and serve.
