  • 3 1/3 tablespoons tomato ketchup
  • 6 3/4 tablespoons mayonnaise
  • 2 tablespoons brandy
  • 6 3/4 tablespoons whipping cream whipped
  • 1/2 cucumber deseeded and finely diced
  • 1/2 lettuce few leaves set aside for garnish, remainder cut into strips
  • 6 11/16 ounces asparagus drained and finely chopped
  • 9/16 pound prawns cooked, peeled, plus 8 tail-on prawns for garnish
  • fresh basil leaves for garnish

Directions

    In a bowl, mix the ketchup, mayonnaise and brandy. Fold in the cream and season with salt and white pepper. Mix in the cucumber, lettuce, asparagus and prawns. Spoon into 4 cocktail glasses and garnish with tail-on shrimp and lettuce and basil leaves.
