Ingredients

  • 1 medium onion, minced (about 1/2 c.)
  • 2 Tbsp. butter or margarine
  • 1/2 c. chopped green pepper
  • 1/4 c. diced celery
  • 1 bay leaf, crushed
  • 1 tsp. snipped parsley
  • 1 tsp. salt
  • 1/8 tsp. cayenne red pepper
  • 1 (6 oz.) can tomato paste
  • 2 c. water
  • 2 c. cleaned, cooked shrimp *
  • 3 c. hot, cooked rice

Directions

    Cook and stir onion in butter until onion is tender.

    Stir in remaining ingredients except shrimp and rice.

    Cook over low heat, stirring occasionally, for about 30 minutes.

    Stir in shrimp; heat thoroughly.

    Serve over rice.
