- 1 medium onion, minced (about 1/2 c.)
- 2 Tbsp. butter or margarine
- 1/2 c. chopped green pepper
- 1/4 c. diced celery
- 1 bay leaf, crushed
- 1 tsp. snipped parsley
- 1 tsp. salt
- 1/8 tsp. cayenne red pepper
- 1 (6 oz.) can tomato paste
- 2 c. water
- 2 c. cleaned, cooked shrimp *
- 3 c. hot, cooked rice
Directions

1Cook and stir onion in butter until onion is tender.

2Stir in remaining ingredients except shrimp and rice.

3Cook over low heat, stirring occasionally, for about 30 minutes.

4Stir in shrimp; heat thoroughly.

5Serve over rice.
