Ingredients

  • 2 Tbsp. butter
  • 1/2 c. minced onion
  • 2 Tbsp. flour
  • 1/4 c. diced celery
  • 1 Tbsp. parsley
  • 1/2 c. bell pepper
  • dash of cayenne pepper
  • 1 bay leaf
  • 1/4 tsp. Tabasco sauce
  • 1/2 tsp. salt
  • 1 (6 1/4 oz.) can tomato paste
  • 1 can tomato sauce
  • 1 can tomatoes
  • 5 c. water
  • 3 c. cooked shrimp
  • 1 1/2 c. cooked rice

Directions

    In a large skillet, melt butter.

    Saute until limp, onion, bell pepper and celery.

    Blend in flour.

    Add parsley, cayenne pepper, Tabasco sauce, salt, tomato paste, tomato sauce, tomatoes and water.

    Add bay leaf but remove before serving.

    Cook for 30 minutes or until thick.

    Stir in shrimp and simmer for 20 minutes. Serve over rice.
