- 1/2 c. flour
- 2/3 c. fat
- 4 c. chopped onions
- 2 c. chopped bell pepper
- 1/2 c. celery
- 2 (8 oz.) cans tomato sauce
- 1/2 c. water
- 3 tsp. salt
- 1/2 tsp. red pepper
- 1 tsp. black pepper
- 3 Tbsp. parsley
- 3 Tbsp. chopped green onion
- 4 lb. shrimp, peeled and deveined
Directions

1Make a golden brown roux with flour and fat.

2Add onions, bell pepper and celery to the roux and cook until tender.

3Combine tomato sauce and water.

4Add tomato sauce, salt, red and black pepper.

5Simmer covered for 20 minutes before serving.

6Add parsley, green onions and shrimp.

7Cook 30 minutes.

8Serve with hot rice.
