Ingredients

  • 1/2 c. flour
  • 2/3 c. fat
  • 4 c. chopped onions
  • 2 c. chopped bell pepper
  • 1/2 c. celery
  • 2 (8 oz.) cans tomato sauce
  • 1/2 c. water
  • 3 tsp. salt
  • 1/2 tsp. red pepper
  • 1 tsp. black pepper
  • 3 Tbsp. parsley
  • 3 Tbsp. chopped green onion
  • 4 lb. shrimp, peeled and deveined

Directions

    Make a golden brown roux with flour and fat.

    Add onions, bell pepper and celery to the roux and cook until tender.

    Combine tomato sauce and water.

    Add tomato sauce, salt, red and black pepper.

    Simmer covered for 20 minutes before serving.

    Add parsley, green onions and shrimp.

    Cook 30 minutes.

    Serve with hot rice.
