- 1 1/2 lb. cooked shrimp (whole or cut in pieces)
- 1 onion, peeled and finely chopped
- 1 green pepper, finely chopped
- 1/2 c. celery, diced
- 2 bay leaves
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3 c. canned tomatoes, chopped
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. cayenne pepper
- 2 tsp. garlic powder
- 1/2 tsp. lemon pepper
- 3 c. cooked rice
Directions

1Saute onion, green pepper, celery and the bay leaves in butter for 10 minutes, being careful not to burn them.

2Add flour; stir until fully blended, 3 minutes.

3Add tomatoes, salt, sugar, garlic powder, cayenne and lemon pepper.

4Simmer gently for 15 minutes. Add shrimp; continue to simmer until shrimp are thoroughly heated. Serve on a bed of hot rice.

5Makes 6 servings.
