Ingredients

  • 1 1/2 lb. cleaned raw shrimp
  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 1 c. chopped bell peppers
  • 2 cloves minced garlic
  • 2 tsp. parsley
  • 1 tsp. seasoning salt
  • 1/4 tsp. cayenne pepper
  • 1 crushed bay leaf
  • 15 oz. can tomato sauce
  • 1 c. water
  • 1/2 c. butter
  • 3 c. cooked long grain rice

Directions

    Stirring constantly, cook onion, bell pepper, celery and garlic in butter until tender.

    Add tomato sauce, shrimp, parsley and other seasonings.

    Cover and cook slowly about 20 minutes or until shrimp are tender.

    (If too thick, add water.

    If not thick enough, mix a heaping teaspoonful of flour and 1/4 cup of water and pour into mixture, stirring constantly.)

    Serve over rice.
