Ingredients
- 1 c. flour
- 1 c. oil
- 2 c. chopped celery
- 1/2 c. chopped onions
- 2 bay leaves
- 1 lg. can chopped tomatoes
- 3 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. chopped onion tops
- 1/2 c. chopped bell peppers
- 2 cloves garlic, minced
- 4 lb. raw shrimp, cleaned and deveined
- 2 sm. cans tomato paste
- 1/4 tsp. red pepper
- 2 Tbsp. chopped parsley
- 1 tsp. worcestershire sauce
- 6 c. water
Directions

1Make roux of flour and oil.

2Brown over low heat, stirring constantly.

3Add seasonings, onions, celery, bell pepper and garlic.

4Cook until soft.

5Add tomatoes and paste, mix well and cook about 5 minutes.

6Add water.

7Let simmer 2 1/2 hours.

8Add shrimp, cook about 20 minutes.

9Add onion tops and parsley.

10Serve over rice.
