Ingredients
- 2 (16 oz.) cans tomatoes, diced
- 1 1/2 c. green peppers
- 1 1/2 c. diced celery
- 2 medium onions, chopped
- 1 or 2 cloves garlic
- 1 c. water
- 4 peppercorns
- 2 lb. shrimp
- 1/2 c. cooking oil
- 1 bay leaf
- 1 tsp. dried parsley flakes
- 1/2 tsp. thyme
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Cook shrimp in 1-quart water with 4 peppercorns for 3 minutes. Saute green peppers, celery, onions and garlic in cooking oil; add other ingredients (except shrimp) and simmer at least 30 minutes.

2Add shrimp and simmer another 10 minutes.

3Serve over rice.
