Ingredients

  • 2 (16 oz.) cans tomatoes, diced
  • 1 1/2 c. green peppers
  • 1 1/2 c. diced celery
  • 2 medium onions, chopped
  • 1 or 2 cloves garlic
  • 1 c. water
  • 4 peppercorns
  • 2 lb. shrimp
  • 1/2 c. cooking oil
  • 1 bay leaf
  • 1 tsp. dried parsley flakes
  • 1/2 tsp. thyme
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

    Cook shrimp in 1-quart water with 4 peppercorns for 3 minutes. Saute green peppers, celery, onions and garlic in cooking oil; add other ingredients (except shrimp) and simmer at least 30 minutes.

    Add shrimp and simmer another 10 minutes.

    Serve over rice.
