- 2 tablespoons butter
- 1 tablespoon flour
- 1 medium onion, minced
- 1 garlic clove, minced
- 1 green pepper, minced
- 1/2 cup celery, minced
- 1/2 cup okra, sliced
- 1 (16 ounce) can tomatoes, chopped
- 1 bay leaf
- 1 teaspoon dried parsley
- 1/2 teaspoon salt (to taste)
- 1/8 teaspoon pepper (to taste)
- 1/2 cup water
- 1/2 lb shrimp
- cooked rice
Directions

1In a large skillet, over medium-low heat, brown flour in butter.

2Add onion, garlic, green pepper, celery, and okra; saute until tender.

3Stir in tomatoes, bay leaf, parsley and salt and pepper.

4Add 1/2 cup water, more if necessary.

5Stir in shrimp, bring to boil; reduce heat and simmer 5 minutes,or until shrimp is done.

6Remove bay leaf.

7Serve over hot rice.
