Ingredients

  • 1 cup thinly sliced or chopped onion
  • 1/2 cup diced celery
  • 1 minced garlic clove
  • 3 T. olive oil
  • 1 T. flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 T. chili powder
  • 1 cup water
  • 2 Cups canned diced tomatoes
  • 2 Cups frozen or canned peas
  • 1 T. vinegar
  • 1 1/2 lbs medium shrimp

Directions

    Peel shrimp. Saute shrimp in olive oil until just pink. Remove from pan and add onions, celery and garlic continue to saute over medium heat for about 10 min - until onions are translucent. Add flour, salt sugar, chili powder and water to pan. Let it simmer for 15 minutes. Add remaining ingredients including shrimp. Heat thouroughly . Serve over rice.
