Shrimp Creole

Ingredients

  • 1 tbsp. canola oil
  • 2 clove garlic
  • 1 medium onion
  • 1 medium green bell pepper
  • 1 celery stalk
  • 2 tbsp. flour
  • 1 can low-sodium tomato sauce
  • 1 tbsp. Creole seasoning
  • 1 bay leaf
  • 3 medium tomatoes
  • 1 3/4 lb. large shrimp
  • 1 or 2 dash Hot pepper sauce

Directions

    Warm a large skillet over medium-high heat.

    Add oil, garlic, onion, green pepper and celery.

    Cook for 3 to 4 minutes, stirring, until softened.

    Add flour; stir to coat evenly.

    Stir in tomato sauce, Creole seasoning, bay leaf and tomatoes.

    Cook for 5 minutes, stirring, until slightly thickened.

    Add shrimp and hot pepper sauce; bring to a boil.

    Reduce heat to low and cook, stirring occasionally, until shrimp are pink and cooked through, about 3 to 5 minutes.

    Remove bay leaf and serve with rice.
