Shrimp Creole

Ingredients

  • 1 lb. boiled shrimp
  • 4 slices bacon
  • 2 c. tomatoes
  • 1/2 c. bell pepper
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/4 c. chili sauce
  • 1 Tbsp. Worcestershire sauce
  • 1/4 tsp. black pepper
  • 1 tsp. salt
  • 4 shakes Tabasco

Directions

    Fry bacon; remove from pan to drain.

    Put onion, celery and bell pepper in bacon fat; brown lightly.

    Add tomatoes, chili sauce, Worcestershire sauce, black pepper, Tabasco sauce and salt. Cook slowly until thick, stirring occasionally.

    Add shrimp 30 minutes before serving.

    Break bacon into small pieces; add last. Go by taste; add more seasoning if needed.

    (One little pinch of sugar helps.)
