- 2 c. onions, chopped
- 1 c. celery, cut up
- 4 Tbsp. olive oil
- 1 (28 oz.) can tomatoes
- 1 can tomato paste
- 1 clove garlic (on a toothpick)
- 1 Tbsp. sugar
- 1 tsp. salt
- pinch of pepper
- 1 bay leaf
- 1 1/2 lb. shrimp (if large, cut up)
- 1 can English peas
Directions

1Saute onions and celery in olive oil.

2Add tomatoes and paste; stir well.

3Add garlic, sugar, salt, pepper and bay leaf.

4Stir and simmer 30 to 40 minutes; add shrimp.

5Cook 15 minutes longer; add peas.

6Serve over rice.
