Ingredients
- 1/4 c. oil
- 1 lb. ground beef
- 1 lb. ground pork
- 1 large onion
- 1 bell pepper
- 1/2 c. celery hearts
- 1 Tbsp. roux
- 3 medium eggplants, peeled
- 4 c. water
- 2 c. raw shrimp
- 1 c. green onions
- 3 c. cooked, hot rice
Directions

1Brown beef and pork in oil.

2Add onion, bell pepper and celery; saute.

3Add roux and eggplant (diced).

4Stir well and add water.

5Let cook on medium-low for 3 hours, adding small amounts of water as needed.

6Stock will get brown and thick.

7Add shrimp and cook 20 minutes longer.

8Add cooked rice and green onions. Mix well and cover.

9Let sit for 10 minutes.
