Shrimp, Eggplant Dressing

Ingredients

  • 1/4 c. oil
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 large onion
  • 1 bell pepper
  • 1/2 c. celery hearts
  • 1 Tbsp. roux
  • 3 medium eggplants, peeled
  • 4 c. water
  • 2 c. raw shrimp
  • 1 c. green onions
  • 3 c. cooked, hot rice

Directions

    Brown beef and pork in oil.

    Add onion, bell pepper and celery; saute.

    Add roux and eggplant (diced).

    Stir well and add water.

    Let cook on medium-low for 3 hours, adding small amounts of water as needed.

    Stock will get brown and thick.

    Add shrimp and cook 20 minutes longer.

    Add cooked rice and green onions. Mix well and cover.

    Let sit for 10 minutes.
