Shrimp Etouffee

Ingredients

  • 1 large onion, chopped
  • 4 ribs celery, chopped
  • 1 c. bell pepper, chopped
  • 6 green onions, chopped
  • 1/4 c. chopped green onion tops
  • 1 stick oleo
  • 1 can cream of mushroom soup plus 1 can water
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. garlic powder
  • 2 tsp. paprika
  • 2 lb. cleaned shrimp (crawfish can be substituted)

Directions

    Saute onion, celery and bell pepper in oleo until onion is tender.

    Add soup and water.

    Bring to a boil.

    Reduce heat and simmer 15 minutes.

    Add seasonings and shrimp; simmer 10 minutes more.

    Add green onion tops and simmer 5 more minutes.

    Serve over rice.

    Will serve 4 to 6 people.
