Ingredients
- 3 to 4 lb. large shrimp, well seasoned with salt, pepper and cayenne pepper
- 1/4 c. oil
- 3 large onions
- 3 to 4 ribs celery
- 3 cloves garlic
- 1 large bell pepper
- 1/2 c. green onions, cut up fine
- 1/2 c. parsley, chopped
- cornstarch (optional)
Directions

1Finely chop onions, celery, garlic and bell pepper; makes for a much better gravy.

2Heat oil in a heavy pot (cast-iron is ideal). Fry onions until just golden brown; add next 3 vegetables and cook for about 5 to 7 minutes, then add seasoned shrimp.

3Cover tightly and let simmer on a low fire for 20 minutes.

4Stir well.

5You may add cornstarch now to thicken gravy.

6Add parsley and green onions just before serving.

7Serve hot over cooked rice.
