Shrimp Etouffee

  • 1/2 stick margarine
  • 3 cups chopped onion
  • 1 cup chopped green onions
  • 2 tsp. lemon juice
  • 1 Tbsp. soy sauce
  • 2 tsp. minced garlic
  • 2 pounds shrimp, peeled and deveined
  • Cayenne pepper and salt to taste

Directions

    In a large skillet melt margarine over medium heat.

    Saute onions and green onions until onions are clear.

    Add lemon juice, soy sauce and garlic and cook for 10 more minutes.

    Add shrimp, salt and cayenne pepper; stir well.

    Reduce heat to low and cover to simmer for about 40 minutes.

    Serve over cooked rice.
