- 2 c. chopped cooked shrimp
- 4 c. boiled rice
- 1/4 c. oil
- 2 eggs, lightly beaten
- 2 Tbsp. soy sauce
- 1 tsp. salt
- freshly ground black pepper
- 3 scallions, chopped
Directions

1Fry shrimp in oil in deep frying pan for 1 minute, stirring constantly. Add eggs, salt and pepper. Fry over medium for 5 minutes, stirring constantly. Add the rice and soy sauce.

2Fry 5 minutes, stirring frequently. Garnish with chopped scallions. Serves 6.
