- 4 slices bacon
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 (6 oz.) can mushroom pieces
- 4 c. cooked rice (unsalted)
- 1 large bottle pimentos, chopped
- 2 lb. shrimp, boiled and deveined
- soy sauce
Directions

1Fry bacon until crisp.

2Remove from pan.

3In bacon drippings, saute onions, peppers and mushrooms.

4Add rice and fry about 5 minutes.

5Add pimentos.

6Reduce heat to warm.

7Add shrimp and crumbled bacon.

8Stir in soy sauce until brown.

9Serve.
