Shrimp Fried Rice

- 4 c. boiled rice (cold)
- 1 large chopped onion
- 3 eggs, beaten
- 1 lb. raw shrimp
- 4 slices bacon
- 1/2 c. sliced mushrooms
- 1/4 c. sliced water chestnuts
- 1/2 c. watercress
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
Directions

1In a large electric skillet fry bacon until crisp.

2Set bacon aside.

3Fry eggs on both sides in bacon drippings left in skillet. Shred egg and set aside.

4Brown onion and rice in bacon grease. Add shrimp and remaining ingredients; stir well until thoroughly heated, about 8 to 10 minutes.

5Stir in broken pieces of bacon and shredded egg.

6Serves about 6.
