Ingredients
- 2 Tbsp. butter
- 1/4 c. diced onions
- 2 Tbsp. green pepper
- 1/4 c. diced celery
- 1 c. okra
- 1 c. tomatoes (canned)
- 1 Tbsp. chopped parsley
- bay leaf (small piece)
- 2 c. chicken stock
- 2 c. shrimp
- salt and pepper to taste
- file powder (optional)
Directions

1Heat butter in a saucepan; add onion, green pepper and celery. Cover 10 minutes or until soft and lightly browned.

2Add okra, tomatoes, parsley, bay leaf, stock and shrimp.

3If canned shrimp is used, add 5 minutes before cooking is finished.

4Cover and simmer gently, about 20 minutes.

5Season to taste.

6Makes 4 to 6 servings.

7Serve with rice.
