- 1 lemon
- 1 bay leaf

- 2 1/4 pounds jumbo shrimp
- 1 5/8 cups flour
- 1 1/16 teaspoons active dry yeast
- 2 eggs whites separated from yolks
- 12 ounces beer choice
- vegetable oil for frying
Directions

1Boil some water with lemon and a bay leaf. When it comes to a boil, add salt and the shrimp.

2Once the shrimp have changed color, remove them and add them directly to a bowl of ice water.

3Peel the shrimp, leaving the tails on, and set aside.

7Beat the egg whites into soft peaks and carefully fold them into the batter.

8Pinching the shrimp by the tail, batter them, then fry them in plenty of hot oil until golden.
