Shrimp Mousse

Ingredients

  • 1 envelope unflavored gelatin
  • 1/3 c. cold water
  • 1 can undiluted tomato soup
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. mayonnaise
  • 1/2 c. celery, diced
  • 1/4 c. onion, minced
  • 1 lb. shrimp, cooked and diced

Directions

    Add water to gelatin and mix in blender. Heat soup in saucepan and bring to a boil.

    Add to gelatin in blender with cream cheese and mayonnaise.

    Blend until smooth.

    Pour back into saucepan and stir in remaining ingredients by hand.

    Pour into a lightly greased mold and let set until firm.

    Unmold and serve on lettuce.
