Shrimp Mousse

Ingredients

  • 1 1/2 tsp. unflavored gelatin
  • 2 (4.5 oz.) cans shrimp, drained and rinsed
  • 8 oz. Neufchatel cheese, softened and cut in chunks
  • 2 Tbsp. creamy buttermilk dressing
  • 1/4 c. cold water
  • 1 medium zucchini, shredded (need 1 1/3 c.)
  • 3 green onions, diced
  • 1/3 c. plain yogurt
  • Melba toast rounds/Carr wafers/for mousse

Directions

    Soften gelatin in 1/4 cup water.

    Let stand for 5 minutes. Cook and stir over low heat until gelatin is dissolved.

    In blender or food processor, blend shrimp, gelatin mixture, zucchini, cheese, green onions, yogurt and dressing.

    Cover and process until nearly smooth.
