  • 1/4 c. salad oil
  • 2 medium size onions, sliced
  • 1 c. celery, sliced
  • 1 medium green pepper, sliced
  • 2 cloves garlic, crushed
  • 2 Tbsp. all-purpose flour
  • 2 (1 lb.) cans tomatoes
  • 2 (4 oz.) cans chopped mushrooms
  • 4 canned pimientos, sliced
  • 2 bay leaves
  • 1 tsp. oregano
  • 1 Tbsp. chili powder
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 lb. fresh or frozen shrimp, shelled and deveined or 2 (8 to 10 oz.) pkg. frozen, peeled and deveined shrimp

    Heat oil.

    Add onions, celery and green pepper and cook until tender.

    Add flour; cook, stirring constantly, until lightly browned.

    Add tomatoes, undrained mushrooms, pimientos and seasonings; mix well.

    Cover and cook 10 minutes.

    Add shrimp; cook 3 to 5 minutes, stirring occasionally.

    Serve over cooked rice or corn chips, as desired.
