- 24 jumbo shrimp, raw, peeled, and deveined
- 1/2 cup flour
- salt
- 2 eggs, beaten
- 1 1/2 cups shredded coconut
- oil, for deep frying
- 1 cup seafood cocktail sauce, bottled
- 1/4 cup crushed pineapple
Directions

1Roll the shrimp in flour seasoned with salt, then dip in the beaten egg.

2Roll the shrimp in the coconut, covering thoroughly.

3Deep-fry the shrimp in oil heated to about 350 degrees until browned and cooked through, about 3 to 4 minutes.

4Drain on paper towels.

5Mix the cocktail sauce with the crushed pineapple.
