- 2 c. water
- 3 to 4 Tbsp. soy sauce
- 3 Tbsp. dry sherry
- 1 medium onion, thinly sliced
- 1 c. long grain rice
- 1 lb. cooked, medium shrimp, peeled and deveined
- 1 medium red bell pepper, diced 1/2 inch
- 1 c. fresh pea pods, cut into thirds
- 2 to 3 tsp. finely minced, fresh ginger
Directions

1Bring water, soy sauce, sherry and onion to boil in skillet; stir in rice.

2Cover and simmer 20 minutes.

3Add shrimp, red pepper, pea pods and ginger.

4Stir.

5Cover and remove from heat. Let stand until all liquid is absorbed, about 5 minutes.
