Shrimp & Orzo Salad

Ingredients
- 1 cup orzo pasta
- 1/2 red onion, diced
- 1/4 cup olive oil
- 1 tablespoon mustard
- 1 ea. cucumber, diced
- 2 tablespoons lemon juice
- 1 teaspoon lemon, jest
- 1/4 cup slivered almonds
- 1 lb shrimp, shelled & devined
- 1/3 cup feta cheese
Directions

1Cook orzo according to pkge. directions.

2Mix olive oil, lemon juice, onions, cucumbers and mustard - set aside.

3Drain orzo and mix in lemon jest.

4Cook shrimp in butter & oil and what ever spices you like - for 1-1 1/2 minute per side.

5Add lemon & oil mixture to the orzo - while still warm.

6Add cooked shrimp and almonds.
-
7Season to taste.

8Serve.
