Ingredients
- 1/2 lb. bacon, diced
- 2 c. onion, chopped
- 1/2 c. long grain rice
- 3 c. chicken broth
- 4 medium tomatoes, chopped
- 2 Tbsp. lemon juice
- 1 tsp. black pepper, ground
- 1/4 tsp. red pepper, ground
- 2 lb. medium sized shrimp
Directions

1In a large heavy pot over medium heat, cook bacon until crisp; remove from pan and set aside (reserving 1 tablespoon of fat).

2In the same skillet, cook onion in reserved fat until tender.

3Stir in rice, broth, tomatoes, lemon juice and pepper; heat to a boil. Cover; reduce heat and simmer 25 minutes or until rice is done. Stir in shrimp and bacon; cook until shrimp is done, about 5 minutes.

4Makes 8 servings.
