- 6 slices bacon, diced
- 1 c. chopped onion
- 3/4 c. regular long grain rice
- 1 (13 3/4 oz.) can chicken broth
- 2 medium tomatoes, chopped
- 2 tsp. lemon juice
- 1/4 tsp. ground black pepper
- 1 lb. medium shrimp, shelled and deveined *
Directions

1In large skillet over medium heat, cook bacon until crisp; remove from pan and set aside, reserving 1 tablespoon fat.

2In same skillet, saute onion in fat until tender; stir in rice, broth, tomatoes, lemon juice and pepper; bring to boil.

3Cover; reduce heat and simmer 25 minutes or until rice is tender.

4Stir in shrimp and bacon; cook and stir until shrimp is cooked and pink, about 5 minutes.

5Garnish with parsley if desired; makes 4 servings.
