Shrimp Potato Stew

- 1/4 c. cooking oil
- 1 onion, chopped
- 1 lb. small raw shrimp, peeled
- 8 medium potatoes, peeled and cubed
- 1 Tbsp. parsley, finely chopped
- 6 c. boiling water
- salt and pepper to taste
- dash of Cajun seasoning
Directions

1In a 4-quart saucepan, heat oil on medium setting.

2Add onions and cook until brown.

3Add shrimp and simmer for 10 minutes.

4Stir in cubed potatoes, parsley, boiling water and salt and pepper. Cook for 60 minutes.

5Serve over rice.

6For better taste, boil shrimp peelings in water for shrimp stock.
