- 9-inch pie shell
- 1 (8 oz.) pkg. frozen shrimp
- 1 Tbsp. flour
- 3 eggs
- dash of cayenne
- 1 c. evaporated milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 8 oz. Swiss cheese, grated
Directions

1Chill pastry shell.

2Chop shrimp (cut in half).

3Toss cheese with the flour and set aside.

4Beat together eggs, milk, salt, pepper and cayenne.

5Spread 3/4 cheese mixture in bottom of pie shell.

6Next, layer in shrimp and cover with rest of cheese.

7Pour egg mixture over all.

8Bake at 400° for 15 minutes.

9Reduce heat to 325° and bake for 40 minutes or until set.

10Let set 10 minutes and then cut and enjoy.
