Shrimp Salad

Ingredients

  • 4 c. hot cooked rice
  • 1/4 c. French dressing
  • 3/4 c. mayonnaise
  • 2 Tbsp. minced onion
  • 1/2 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 3 drops of hot sauce
  • 1/2 tsp. dry mustard
  • 1 c. diced celery
  • 1 1/2 c. cooked peas
  • 2 cans shrimp
  • lettuce

Directions

    Combine rice and French dressing; cool to room temperature. Mix mayonnaise, onion and seasonings.

    Place celery and peas in large mixing bowl; pour in mayonnaise mixture.

    Add rice mixture, toss lightly with fork.

    Chill salad well.

    Drain and chill shrimp. Add shrimp to salad just before serving.

    Turn salad into lettuce lined bowl.

    Garnish with tomato wedges.
