Shrimp Salad

Ingredients

  • 1 can Campbell's tomato soup
  • 8 to 12 oz. cream cheese
  • 2 Tbsp. gelatin, dissolved in 1/2 c. hot water
  • 2 c. cooked shrimp, cut in small pieces
  • 1 small onion, minced
  • 1/4 c. diced green pepper
  • 3/4 c. diced celery (add all to cream cheese mixture)
  • 1 c. mayonnaise (added when mixture cools)

Directions

    Heat soup and cream cheese in double boiler or in microwave at 50%, 3 to 5 minutes.

    Pour mixture into 6-cup mold or individual molds.

    Unmold on serving plate and garnish with greens.

    If seafood mold is used, ripe olives and pimento can be used for eyes and mouth.

    This may also be used as appetizer and served with your favorite crackers.
