  • 2 tablespoons olive oil
  • 1 lb. peeled and deveined large shrimp
  • 1 onion, chopped
  • 1 cup halved grape tomatoes
  • 4 cloves garlic, minced
  • 1/2 cup dry white or reduced sodium chicken broth
  • 1 cup reduced sodium chicken broth
  • 1/2 cup chopped fresh basil or parsley
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter

Directions

    Heat oil in large, heavy skillet over medium-high heat.

    Cook shrimp, turning, until golden brown, about 3 minutes. Transfer to plate.

    Cook onion, stirring until golden brown, about 4 minutes.
