- 2 lb. any size shrimp (unshelled)
- 1/2 c. butter or margarine
- 1 c. salad or olive oil
- 1/4 c. parsley
- 6 cloves garlic, crushed
- 1 tsp. salt
- dash of cayenne pepper
- 1/4 c. lemon juice
Directions

1Rinse shrimp; remove shells, leaving tails on.

2Devein.

3Wash under cold running water.

4Drain and pat dry.

5Melt butter or margarine in a shallow baking pan.

6Add salad oil, 2 tablespoons parsley, garlic, salt, cayenne and lemon juice.

7Mix well.

8Add shrimp, tossing or stirring lightly in butter mixture to coat well.

9Arrange in a single layer in the pan.

10Broil 4 to 5 inches from heat 5 minutes.

11Turn shrimp.

12Broil 5 to 10 minutes longer or until red and lightly browned.

13Serve shrimp with remaining chopped parsley sprinkled over the mixture.

14Serves 8.
